At Elysia, Sophie and I are always creating exciting recipes to transform all of the great produce that we rescue into delicious dishes for events that we cater. We also work with some great companies who use surplus food and turn it into delicious new products, such as Snact who makes wholesome food waste-fighting snacks to create more taste and less waste!
We made these little crunchy granola and Snact chocolate bites for a recent event and the recipe is so sweet and simple we thought we would share it!
You will need just 3 surplus ingredients:
200g Milk chocolate
60g Snact fruit jerky
Start by melting the chocolate, break it into small pieces and place them into a large heat-proof bowl set above a pan of barely simmering water, make sure that the bottom of the bowl doesn’t touch the water directly.
While the chocolate is melting cut the fruit jerky into small pieces and line a cake tin or tray with grease proof paper.
Once the chocolate had melted add the granola and fruit jerky to the chocolate and mix them all together.
Tip the mix into the lined tray, place another piece of baking parchment on top and use a rolling pin to flatten the mix together.
Allow to set at room temperature, this could take a couple of hours, then cut or break the slab into pieces and enjoy!
