Recipe - Root to Stem Cauliflower Soup

If you have a cauliflower - don't throw away the leaves! You can make use of the whole vegetable with a root to stem delicious soup. Cauliflower stems (like the broccoli ones or leek greens) are something that unfortunately too often ends up in the bin.



Ingredients for 4

1 cauliflower (large)

2 potatoes

1 tsp of cream

EV olive oil

salt/pepper



Wash your potatoes and cauliflower. Set aside the florets - they can be use for another dish such as roasted in the oven with cheese on top!


Cut the potatoes, the cauliflower's stems and leaves in small pieces. Add them into a pot


Cover them with water, add salt and pepper.


Leave to boil and simmer for 30 minutes.


Blend the soup and add some olive oil, creme fraiche on the top! You can add any spices and nuts as well - it is delicious, cost savings and will fill you up with a couple of slices of sourdough bread & farmhouse butter!
