Product of the week: Whey Caramel

Homemade caramel made from British whey.

At Elysia, we work with local producers and aim to help them reduce surplus and waste by sourcing aesthically imperfect produce to make our jams and fermented vegetables.

Today we would like to introduce our delicious whey caramel! Whey is the liquid remaining after milk has been curdled and strained. Often discarded, we source this byproduct from our neighbours Kappacasein & Neals' Yard Dairy making yoghurt and ricotta!

We've been testing different recipes to get our signature whey caramel at the best consistency. Absolutely delicious on LBP sourdough bread or with Husk & Honey granola and yoghurt.
