Cooking Tips : Sofrito (Substitute for stock cube)

We have decided to offer cooking tips for people at home to help making the most we have at home! Today Beth, our head chef, will run us though a step by step guide on how to make Sofrito.
What is Sofrito:
It’s like the equivalent of a Stock Cube or a pasta sauce. You will find this in the foundation of most French and Italian cooking. It also uses up all your leftover veg that you might otherwise throw away.
Ingredients:
Leftover Vegetables
We are using: 1 Sad Celery stick (that would otherwise be wasted), Garlic, onion, leeks, carrots. But you can use anything you have lying around.
What can I put it in?
Pasta
Stews
Soups
Sandwich
The base for Meat dishes
And any other things, be creative!
How long will it last?
If you keep it in the fridge: 1 week
We would recommend freezing it if you do not want to use right now!

Introduction to Sofrito
Step 1:
Chop up all the vegetables and Put them in a blender.
If you don't have a blender, try to chop them up really finely and mash them together.
Step 2:
Blend them up!
Step 3:
Make sure that it is blended really well, it should look really finely chopped so when you want to cook it, it will turn into a lovely puree.
Step 4:
Now you can cook it, put it in the frying pan with a little bit of salt & Olive oil.
Step 5:
Keep stirring until it caramelises!
Step 6:
It's done!
