Whats in Season: January Edition

So, let's start of this new year right!
This year we have decided to try and share more of our Knowledge on how to reduce food waste at home so every month we have decided to share What seasonal food is in Season, with some recipes using those seasonal produce!

So, in January, we are all about the root vegetables, from Beetroot to Celeriac you have a wide range of exciting vegetables to get stuck into.
List of Fruits & Vegetables in Season in the UK in January:
- Apples
- Beetroot
- Brussels Sprouts
- Cabbage
- Carrots
- Jerusalem Artichokes
- Kale
- Leeks
- Mushrooms
- Onions
- Parsnips
- Pears
- Squash
- Swedes
- Turnips
Recipe: Winter Ratatouille
Ingredients:
Winter vegetables
EV Olive oil
Garlic
Herbs
Salt, Pepper
Preheat the oven to 200C/400F/Gas 6.
Place all the vegetables and the garlic on an oven tray and drizzle with the olive oil and honey. Add dried or fresh herbs and season well. Cook for about 20 minutes until all the vegetables are tender and browned.
Remove vegetables from the oven, squeeze the cloves of roasted garlic over the vegetables and tip everything in a saucepan.
The ratatouille can be made in advance and frozen.
