Our Head Chef, Beth, created a hearty menu for the cold days made from the surplus ingredients of our local producers.
Did you know that lots of fish skin is wasted making filet? We buy the extra skin, dehydrate it and transform it for the base of our Ceviche Canape. Beautiful and so simple!
Because of temperature change, chocolate aspect can because a little bit dull to be sold to regular customers. It could be easily transformed for cooking. We make Dark Chocolate Tartlet filled with a Walnut & Coffee Mousse.
