How to use your leftovers, especially those potatoes!

We all love our roast dinners and any type of meal with potatoes in it, especially when it's coming closer to Christmas! Yet once we’ve had that meal we have no clue what to do with them.

Did you know that potatoes are the second most wasted food in the UK!! (Business Green). Roughly 46% of the potatoes we buy, end up going to landfill, contributing to greenhouse gas emissions and negatively impacting our environment.

So, you might be asking what can I do with them?

Potatoes are a great way to bulk out meals, whether it's in a soup, omelette or a curry. Particularly as its getting colder, we are all craving those hearty meals more and more!

You could also make a delicious potato salad, by simply just cutting up some red onion, mixing them in with your boiled or roast potatoes and adding some mayonnaise.

Tom Hunt has an excellent recipe for Spanish tortilla’s, or if that sounds too fancy, you could just make hashbrowns for breakfast.

Whatever it is, don’t throw your spuds away as they make great meals that don't even seem like your using up your leftovers.
