For canapés events, at Elysia we collaborate with our great partner One to Wine (OTW), a wine start-up company located in East London.
OTW selects wine from the best producers in France and Italy and then creates easy understandable labels to make high-quality wine more “user-friendly”. More information about One to Wine in our blog post.
For the Spring season 2018 we have decided to treat our clients with something special: we have created the perfect food/wine pairing for the longer days and parties. Elysia prepared three appetising gougères* topped with a colourful ChicP hummus (carrot/beetroot/herby), together with a fruit compote verrine for those with a sweet tooth. Meanwhile, OTW picked out the best Italian wines to accompany the food and the warmer Spring night.
*Gougères come from French cuisine from French cuisine. It is known in English as “cream puff dough,” gougères are cheese puffs made by folding cheese into the dough then baking them in little rounds. Gougères can be made as small pastries, 3–4 cm. in diameter; aperitif gougères; 10–12 cm.; individual gougères; or in a ring.
Their first pick is Bidoli Friulano Friuli DOC Grave 2017. It has been selected for its freshness, slight acidity and light bouquet of flowers and citrus fruits, making it perfect for picnic time in summer season.
Their second choice is Kurtin Opera Prima IGP Delle Venezie 2016. It has both powerful aromas to balance the gougères pastry and a crystal freshness together with a fresh acidity on the palate to stay cool out in the sun.
And finally their third Italian treasure is Giovanni Drì Monte Dei Carpini Schioppettino DOC Collio Orientali Friuli 2015. It has the perfect balance between fresh fruity notes and gourmet chocolate and nutty notes, which will be a delight with the gougère pastry of Elysia.
Our cooperation (read our interview here) with OTW also allows us to offer three amazing wine-based cocktails that will get any summer party started. We are happy to share the cocktails’ recipes with you. They are freshly served on ice with only a light sweetness that makes them the perfect choice for a warm day.
The first cocktail is Thames Royal. It is based on the Crémant de Loire 2014 Domaine Maison. It is an exceptional sparkling wine with citrus fruits, brioche pastry and white flowers.
1 cl Liquid Sugar
4 cl Elderflower Limonade
10 cl Crémant de Loire 2014 Domaine Maison
2 cl Lime Juice
A few frozen red fruits (strawberries, blackberries etc…)
First add the liquid sugar into a glass, a dash of lime juice and then the Crémant de Loire 2014 Domaine Maison. Add carefully the elderflower lemonade and put a few frozen red fruits in the glass. You can use a lime zest for decoration.Enjoy your cocktail!
The second cocktail is King Sauvignon. It is based on Sauvignon Blanc du Petit Clocher. This wine hasvery rich and intense aromas of Sauvignon with grapefruits, lime, white stone fruits notes and some green wood, a real delight with a crisp vivid palate, very expressive and fresh.

2 cl Crème de Cassis
10 cl Sauvignon Blanc du Petit Clocher
3 or 4 Basil leaves
In a large balloon glass, filled with ice cubes, pour the Crème de cassis. Then add the Sauvignon Blanc du Petit Clocher before adding the Basil leaves.Stir and serve the cocktail!
The last one is Pink Flamingo,based on Rosé de Loire 2016 Domaine du Petit Clocher. It is a fresh yet expressive drink, with notes of raspberries, sour candy, lemon and violet. It provides a vivid taste balance with just a hint of sweetness. A must-have!
Recipe "Pink Flamingo"
1 bottle of Rosé de Loire 2016 Domaine du Petit Clocher
0,75l of club soda
Juice from one lemon (+ some slices for decoration)
2 dL of liquid sugar
Mix all the ingredients and stir well. Let it rest in the fridge to infuse for at least 1h. Serve really chill and enjoy!
